{"id":299,"date":"2010-11-08T00:30:00","date_gmt":"2010-11-08T00:30:00","guid":{"rendered":"http:\/\/www.ladymacblog.com\/?p=299"},"modified":"2010-11-08T00:30:00","modified_gmt":"2010-11-08T00:30:00","slug":"souptastic","status":"publish","type":"post","link":"http:\/\/www.ladymacblog.com\/?p=299","title":{"rendered":"Souptastic!"},"content":{"rendered":"<div style=\"text-align: center;\">Another request from a friend and it is indeed another soup recipe:)<a href=\"http:\/\/2.bp.blogspot.com\/_It9KDpK7ADM\/TNdFERnzHmI\/AAAAAAAAJyI\/ntbagKHULaI\/s1600\/DSC06742.JPG\"><img decoding=\"async\" style=\"display: block; margin: 0px auto 10px; text-align: center; cursor: pointer; width: 320px; height: 240px;\" src=\"http:\/\/2.bp.blogspot.com\/_It9KDpK7ADM\/TNdFERnzHmI\/AAAAAAAAJyI\/ntbagKHULaI\/s320\/DSC06742.JPG\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5536970206627438178\" border=\"0\" \/><\/a><\/p>\n<div style=\"text-align: left;\"><span style=\"font-weight: bold;font-size:130%;\" >Chick Pea Salsa Soup<\/span><\/p>\n<ul>\n<li>1 big onion<\/li>\n<li>5 garlic cloves<\/li>\n<li>2 Tbsps coconut oil<\/li>\n<li>hot sauce to taste<\/li>\n<li>2-28oz cans diced tomatoes<\/li>\n<li>4 cups chicken broth<\/li>\n<li>1\/4 cup tomato paste<\/li>\n<li>4 tsps coconut sugar<\/li>\n<li>2-19oz cans chick peas<\/li>\n<li>4 cups fresh spinach (be generous)<\/li>\n<li>2 cups zucchini<\/li>\n<li>salt and pepper to taste<\/li>\n<li>Greek yogurt<\/li>\n<\/ul>\n<p><\/p>\n<ol>\n<li>Cook chopped up onion and garlic in coconut oil till soft.<\/li>\n<li>Add hot sauce and stir.<\/li>\n<li>Add the tomatoes, broth, tomato paste and coconut sugar then mix well.  Bring to a boil.<\/li>\n<li>Drain and rinse the canned chick peas then add to the soup with the spinach and diced zucchini and heat through till zucchini is soft (doesn&#8217;t take long).<\/li>\n<li>Season with salt and pepper to taste.<\/li>\n<li>Top with Greek yogurt, add more black pepper to enhance the soups flavor and serve with the Parmesan biscuits.<\/li>\n<\/ol>\n<p><span style=\"font-size:130%;\"><br \/><span style=\"font-weight: bold;\">Parmesan and Spelt Drop Biscuits<\/span><\/span><\/p>\n<ul>\n<li>2 cups white unbleached flour<\/li>\n<li>1 cup spelt flour<\/li>\n<li>4 tsps baking powder<\/li>\n<li>4 tsps oregano<\/li>\n<li>1\/4 cup Parmesan (be generous)<\/li>\n<li>2\/3 cup butter<\/li>\n<li>1 1\/2 cups milk<\/li>\n<li>Paprika for sprinkling<\/li>\n<li>Parmesan for sprinkling<\/li>\n<\/ul>\n<p><\/p>\n<ol>\n<li>Mix the flour, baking powder, oregano and cheese together.<\/li>\n<li>Cut the butter into the flour with a pastry knife till crumbly.<\/li>\n<li>Add milk to batter and stir till just moist (dough will be sticky).<\/li>\n<li>Drop by spoon full (be generous) onto greased cookie sheet or un-greased seasoned stone sheet.<\/li>\n<li>Sprinkle with paprika and cheese.<\/li>\n<li>Bake in the middle of the oven at 425 for about ten minutes give or take&#8230; till golden and toothpick tested.
