This is a favorite recent idea of mine.<\/span><\/span><a href=\"http:\/\/3.bp.blogspot.com\/_It9KDpK7ADM\/TJJwg95nNXI\/AAAAAAAAJLs\/44hLsBbk8aU\/s1600\/DSC05156.JPG\"><img decoding=\"async\" style=\"display: block; margin: 0px auto 10px; text-align: center; cursor: pointer; width: 320px; height: 240px;\" src=\"http:\/\/3.bp.blogspot.com\/_It9KDpK7ADM\/TJJwg95nNXI\/AAAAAAAAJLs\/44hLsBbk8aU\/s320\/DSC05156.JPG\" alt=\"\" id=\"BLOGGER_PHOTO_ID_5517596205156611442\" border=\"0\" \/><\/a><\/div>\n<div>\n<h2>Green and Red Soup with Sour Dough Croutons<\/h2>\n<\/div>\n<div>\n<div>\n<p><span style=\"font-size:100%;\">5 cloves of garlic<\/span><\/p>\n<p><span style=\"font-size:100%;\">1 large onion<\/span><\/p>\n<p><span style=\"font-size:100%;\">2 cups chopped celery<\/span><\/p>\n<p><span style=\"font-size:100%;\">2 <span>Tbsps<\/span> grape seed oil<\/span><\/p>\n<\/p>\n<p><span style=\"font-size:100%;\">8 cups chicken or veggie broth<\/span><\/p>\n<p><span style=\"font-size:100%;\">Salt to taste<\/span><\/p>\n<p><span style=\"font-size:100%;\">1 tsp turmeric<\/span><\/p>\n<\/p>\n<p><span style=\"font-size:100%;\">4 cups <span><\/span>broke up broccoli<br \/><\/span><\/p>\n<p><span style=\"font-size:100%;\">1\/2 -1 cup of red <span>quinoa<\/span><\/span><\/p>\n<\/p>\n<p><span style=\"font-size:100%;\">1 cup chopped parsley<\/span><\/p>\n<p><span style=\"font-size:100%;\">2 cups fresh spinach<\/span><\/p>\n<\/p>\n<p><span style=\"font-size:100%;\">3 cups of small salsa meatballs<\/span><\/p>\n<\/p>\n<ul>\n<li><span style=\"font-size:100%;\">Smash and chop up the garlic, cut up the onion and celery as well and cook  till soft in the grape seed oil. <\/span><\/li>\n<li><span style=\"font-size:100%;\">Once  onion mix is nice and soft add the broth and warm it up.  (tip- if you   don&#8217;t have enough broth, I realised too late I only had 4 cups of  chicken broth,  add water to make up the rest and just add more <span>turmeric<\/span>  and salt to give it the  right color and taste of a salty broth) <\/span><\/li>\n<li><span style=\"font-size:100%;\">Once broth is hot add the broccoli and let it come to a boil. <\/span><\/li>\n<li><span style=\"font-size:100%;\">When it is boiling add your <span>quinoa<\/span>.  You will know it is done when the grain  germ starts to float around. <\/span><\/li>\n<li><span style=\"font-size:100%;\">Once the grain is cooked and the broccoli soft but not mushy, add the  parsley and spinach. <\/span><\/li>\n<li><span style=\"font-size:100%;\">When the spinach has wilted throw in the precooked meatballs and cook till  they are warm. <\/span><\/li>\n<li><span style=\"font-size:100%;\">Serve with croutons on top.<\/span><\/li>\n<\/ul>\n<p><span style=\"font-size:100%;\">Salsa  Meatballs are pretty simple.  Mix 2 lbs of ground meat with 1\/2 a cup   of salsa, 1 egg and enough wheat germ and oat bran to make it the right   <span>consistency<\/span> to mold.  Roll them and roast them at 400 for about 8  minutes each  side.  The smaller you make them for the soup the better.<\/span><\/p>\n<p><span style=\"font-size:100%;\">Sour  Dough Croutons are simple too.  I had some old sour dough so I chopped   it up and tossed it in olive oil and <span>Italian<\/span> seasonings.  I then spread  them out  on a cookie pan and roasted till golden and crispy, turning  over half way  through so they where evenly cooked.<\/span><\/p>\n<p><span style=\"font-size:100%;\">I had both the croutons and the <span>meatballs<\/span> made ahead and frozen<span><\/span> so it was  pretty easy to wipe this up tonight.<\/span><\/p>\n<p><span style=\"font-size:100%;\"> <span>TTFN<\/span><\/span><\/p>\n<\/div>\n<\/div>\n<p><!--Session data--><\/p>\n<div><\/div>\n","protected":false},"excerpt":{"rendered":"<p>I like to invent meals as I go and only now and then do I remember to write down what I did.
